Spicy Cucumber Salad

 

You need

A small packet of raw Gherkins (about 10-12), crushed and cut into small pieces

OR 1 English Cucumbers, peeled, pipped and cut into small pieces

3 Cloves Garlic, peeled, crushed and chopped into fine pieces

1 Chilli, cut into fine pieces

Light Soya Sauce, 10 ml

Rice Vinegar, 10 ml

Sugar, 5 ml

Sesame Oil

Salt, 2-3 ml

 

Methods:

Prepare gherkins (cucumber) first, and put into the fridge, while you prepare all the other ingredients

Prepare the dressing by mixing the garlic, chilli, soya sauce, rice vinegar, sugar and salt

Bring out the Gherkins (cucumber) and mix with the dressing, sprinkle with a few drops of sesame oil

Serve immediately

 

Note:

You may need to salt it beforehand, if the skin is tough.

There is no rule to the amount of garlic or chilli required.  I sometimes add spring onion and coriander if I am in the mood for it.
